Make Your Own Taco Salad

 

Want a taco salad, but don’t want to head to the nearest Mexican restaurant? Make your own! This recipe is super easy, healthier, and a lost less energy/time consuming than making yourself look pretty to go out! And this means more time for me to play Elder Scrolls Online. 

Plus, it means that my boyfriend can’t order something that isn’t salad off the menu. But with this recipe, he doesn’t even want to eat anything else! All you need for the acceptance of these leafy greens is the delicious combination of chili and tortilla chips! For the taco portion of the salad you will need: 1 pound ground beef, 1 packet of McCormick’s Chili seasoning, 1 can of “pork and beans,” 1 can of kidney beans, 2 cans of diced tomatoes. If you’re another unfortunate person like myself that doesn’t like tomatoes, you can substitute Mexicorn for the tomatoes! I also threw some Mexicorn in with the batch that included tomatoes for an extra kick. It was great!

 

 

First, spray your pot with cooking spray (I always like this reminder, because I’ve forgotten to use some before with very messy results) and then brown your ground beef in the pot. Once cooked thoroughly, add the packet of seasoning, mixing thoroughly throughout the meat. Then, add the cans of beans, tomatoes, and/or Mexicorn, stirring occasionally until cooked.

For the actual salad portion of your taco salad, grab a bag of salad from the grocery store (I used Dole’s Classic Romaine), spread it on the bottom of your plate, then toss on some tortilla chips, and spread your chili over the top! Congrats, you’ve made your very own heavenly taco salad!

Ingredients
  • 1 pound ground beef
  • 1 packet McCormick’s Chili seasoning*
  • 1 can pork and beans
  • 1 can kidney beans
  • 2 cans diced tomatoes (Optional: 2 cans Mexicorn)
  • 1 bag of Tortilla chips
  • 1 bag of salad
Instructions
  1. First, spray your pot with cooking spray and then brown the ground beef. Add chili seasoning packet, mixing thoroughly throughout the meat.
  2. Next, pour in the cans of beans, tomatoes, and/or Mexicorn, stirring occasionally until cooked (mine is usually hot before boiling).
  3. Spread salad on the plate, with tortilla chips on top, and finally pour on the chili. Choose whatever toppings you enjoy, such as cheese or sour cream, but this taco salad is delicious all by itself!
  4. *When doubling or tripling the recipe, just add a packet of seasoning for each pound of ground beef you use!
