Recipe: Easy and Gluten-free, Baked Mac and Cheese


After reading Dr. Meyer’s The AutoImmune Solution, I decided to take the gluten free plunge. Little did I know that literally everything from cereal down to toothpaste, shampoo, and seasonings have freaking gluten in it. Even though I have been feeling overwhelmed about cooking and baking without gluten, I have started to modify some old favorites, like my Mom’s mac n’ cheese.

You will need 3 boxes of Gluten free noodles (the kind I have bought is from Aldi’s live Gfree line, which I LOVE), 1 bigger box of gluten-free macaroni noodles, 2 bags of gluten-free shredded cheese, a stick of butter, and milk.


Boil water. Then dump your noodles in and cook them until soft (it only took about 6 minutes for my noodles to cook, but follow your packages’ instructions). Drain the water from your noodles. Turn down your burner (this is so the noodles don’t stick) and put the noodles back on the stove, and add your seasoning packets, 1 stick of butter (this is optional, but adds more flavor), both bags of cheese, and 1 cup of milk. Stir until mixed thoroughly.


Then, put your mix into a greased casserole and bake at 350 degrees for 1 hour! Be prepared to smell mouth-watering aromas for the next hour and then enjoy!

An easy baked mac and cheese dish that doesn’t even taste like it’s gluten free!
  • 3 boxes 6 oz Gluten-free noodles ( I used Aldi’s live Gfree line)
  • 1 box larger Gluten-free Macaroni noodles (I used Ronzoni)
  • 1 stick of butter
  • 1 cup milk
  • 2 bags shredded cheese
  1. Bring water to boil.
  2. Cook noodles following package instructions or until tender.
  3. Drain water.
  4. Turn burner down and put noodles back on the stove.
  5. Add seasoning packets from boxes, both bags of cheese, 1 stick of butter, and 1 cup of milk.
  6. Stir mixture until spread and coated evenly throughout.
  7. Put into greased casserole dish and cook for 1 hour at 350 degrees.
