Recipe: Mom’s Favorite Carrot Cake

Every year, I bake my mother the same cake for her birthday! It’s one of my all time favorite recipes and I’ve been meaning to share it for a long time! In the past it was gobbled up so fast that I wasn’t been able to take many pictures. Better late than never, right?

This Carrot Cake recipe comes from the same woman who created my Best Ever Coconut Cake Recipe. It’s no surprise that she ran her own successful cake baking business!

My mom and I both agree that it’s the best carrot cake we’ve ever tasted–and we’ve tried A LOT of them! I’ve even been to weddings with Carrot cakes that couldn’t compare! Now I’m going to share this delicious recipe with you so you can rock your next family gathering!


The icing is a bit messy, and I’m clearly not a cake decorator, but it’s the inside that counts, right? And the inside of this cake is pure heaven!

This is one cake that tastes just as amazing as a sheet cake as it does as a layer cake. In fact, my mom and I typically bake this cake as a sheet cake so we have all of that scrumptious cream cheese icing on top!

Recipe: Mom’s Favorite Carrot Cake

  • For the Cake:
  • 2 cups grated carrots
  • 2 cups sifted flour
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • 1 1/2 cups oil
  • 4 eggs
  • 2 cups sugar
  • For the Icing:
  • 1 8oz pack of cream cheese at room temperature until soft
  • 1 1b confectioner’s sugar
  • 2 2/3 TBSP of butter – real soft, but not melted
  • 1 tsp of vanilla
  • 1/2 cup pecans
  1. Mix oil and sugar, add eggs, and beat. Grate the carrots. Add the dry ingredients that you have sifted together and the carrots. Mix well. Put into well greased and floured pans (9 inch layer pans or 13″ x 9″ pan). Bake at 350 degrees until done (times will vary depending on oven). When done, the cake will pull away from the edges of the pans. I baked my layer cake in my gas oven for about 35 mins.
  2. For the icing, simply mix all of the ingredients together and spread it on your cooled cake!
